Fried cream / Fried cream

For a long time, I wanted to do the fried cream. The fried cream is one traditional preparation which is served in various regions of Italy, and as an appetizer a contour be like dessert. to fried bolognese cream a marchigiana it is tasted in these regions together with a mixed fry composed of Ascoli olives, vegetables and fried meat. The fried cream is instead consumed in Venice at the end of the meal, as a dessert, especially during the Carnival period.
Since there are so many fried cakes made during this Carnival period, I decided.
Searching the internet, I found many recipes. but I chose one from the blog of Mestolo & amp Paiolo.

I modified a bit, I put a sachet of vanillin and instead of cornstarch, the potato starch. since it has the same principle.
The result. it's delicious!
When hot it looks a lot like "fried flat".

Mix the egg yolks with the sugar, flour, cornstarch .. I put the potato starch, a pinch of salt, grated lemon peel and vanilla, until a homogeneous mixture.
While stirring, add a little milk until the mixture is diluted. Pour in the remaining hot milk and bring to a boil, stirring constantly, until very thick. Pour the cream on a large tray and spread it about 1.5-2cm thick. and let it cool. Cut it into small rectangles or cubes, pass them in the snow-whipped albumen and then in the breadcrumbs. Fry in plenty of oil, browning on both sides. Serve only when it is completely cooled.

Dolce alle mele / Apple pie

Mix all the ingredients for the basic dough and work it until it becomes homogeneous and smooth. Put in the fridge to rest for 1 hour. Roll out the dough into two sheets (about 0.5 cm thick) no larger than 30/24 cm. Put the first in the pan lined with baking paper, place the apple filling on top and then the other puff pastry. Close the edges, punch holes with the fork and brush the egg (optional) all over the surface.
Grate the apples and mix with the sugar, cinnamon and breadcrumbs.
If you like it sweeter, add the sugar.
After you have filled the two sheets, put the cake in the preheated oven, at a medium temperature, until golden.
Leave to cool, sprinkle with vanilla icing sugar and cut into squares.

Different types of filling I make:
* salted cheese - grated quartirolo cheese (also mixed with half a grain) mixed with 1 egg.
* sweet cheese - sweet ricotta cheese with sugar, grated lemon peel, raisins, vanillin
* pumpkin pulp already baked in the oven, mixed with sugar, vanillin and a little breadcrumbs.
* with meat ragout without tomato sauce. only fried with minced beef or mixed pork, cooked over medium heat. until the meat is ready. Add a little at a time of the broth. In the end it should be drier and when it is cold mixed with the egg, a little cooking cream and grated grain.

For the first time I made fennel this way and we really liked it. "Inspiring Muse" was an old, side-by-side magazine with vegetable recipes.

Mash the olives, capers, parsley and anchovy fillets. Add the oil and vinegar. Let the sauce rest for about 10 minutes and then pour over the fennel, cover the plate with cling film and leave to season for 1 hour before serving.

Marinating sauce

Caramel and chocolate squares

Ingredients for the base:
* 150 g of flour
* 1 teaspoon of baking powder
* 125 g of softened butter
* 50 g of sugar
* a pinch of salt

Ingredients for caramel:
* 12 g of butter
* 100 g of sugar
* 2 tablespoons maple syrup (otherwise use 1 tablespoon honey)
* 350-400 g of sweetened condensed milk

Chocolate icing
* 250 g of dark or milk chocolate

Knead the butter with the sugar until you get a creamy mixture. Incorporate flour, yeast and salt and mix everything. The compound is quite dense. Preheat the oven to 170 & # 176 and cover a baking sheet (24x24 cm) with baking paper. Spread the mixture on the baking sheet and bake for about 15 minutes or until it takes on a golden color.
Put the butter and sugar in a non-stick pan, mix well, melting the butter and sugar well, add maple syrup and condensed milk. Always continue to mix. When it starts to simmer, count about 5 minutes until it settles and becomes a nicer golden color. Remove from the heat and allow to cool. Spread on the base and allow to cool completely.
Melt the chocolate (I put the milk one) in a bain-marie and pour it evenly over the caramel layer.
Leave to cool and harden and then cut the cake into squares.

Wheat ingredient :

Preheat the oven to 170 & # 176C and line a 24 X24 cm tray. Rub the soft butter well with the sugar until it becomes creamy. Add flour, baking powder and a pinch of salt. The result is a pretty hard dough. Spread it in the pan and let it bake for about 15 minutes or until you see that it has become a little golden.

Melt the butter and sugar well in a saucepan over medium heat, add the maple syrup and condensed milk. Keep on the right heat and when it starts to boil, keep it for another 5 minutes, stirring constantly, the caramel should thicken a little. Turn off the heat and let it cool a bit.
Spread the caramel on the surface of the countertop and let it cool well. Melt the chocolate in a bain-marie and spread it evenly with a knife over the entire surface of the caramel. Allow to cool well and then cut into squares.

** The top is quite dry, like a cookie. Next time I'd like to make a softer, fluffier countertop. the one from fluffy cake with jam.

Growing vegetables

Venice is also famous for growing vegetables. Among the most appreciated are the red ridicchio salad from Treviso and the white asparagus from Basano del Grappa. Pumpkin dishes and legume dishes are also popular, for example bean paste, ie pasta with beans, or Venetian red bean soup.


Milan is the capital of Lombardy, the rich region of northern Italy. Although no longer an agricultural land, Lombardy is still known for its excellent rice. It is cultivated here since the 15th century - through the Saracens it first appeared in Spain, from where the Aragonese rulers brought it to Lombardy.
The traditional food is & # 8220risotto alla milanese & # 8221, meaning Milanese risotto served with saffron. Also famous are the cakes with stuffed macaroni, including ravioli and agnolotti with pumpkin filling. Meat dishes prepared in wine, different types of salami as well as chicken legs are considered delicacies. At the end of the meal, instead of sweet dessert, cheeses are often served, among others: gorgonzola, mascarpone and grana padano.This does not mean that Lombardy is not known for its delicious desserts - for example tiramisu made from mascarpone cheese.

The first cookbook

During the Renaissance, the first culinary book in Italy was made here. This is not only a collection of recipes but also a true compendium of the science of food values, food composition, seasoning, hygiene and even ethnic issues related to food.

Before the great conquests, the culinary culture of the population from the Tiber area was quite modest. This situation has changed with the culture of feasts brought from Greece. The name comes from the cities of Parma and Reggio, where in the thirteenth century it began to be produced. The name Parmesan is registered only for cheeses produced in several provinces: Parma, Reggio Emilia, Modena, Mantua or Bologna. The milk should only come from cows that feed on pastures with fresh feed. Parmesan is matured between 11 and 36 months - depending on the duration of the ripening period, young cheese is obtained (fresco), medium-old (vecchio) or old Parmesan (stravecchio). The uses of these cheeses are also different. Young cheese serves as table cheese, while old cheese is used as an ingredient in pasta and rice dishes, salads, soups and sauces.

The summer season (June-August) is burning and dry while the winter is mild and foggy. If you visit northern Italy in cities like Bologna, Verona, Venice or Milan, the spring season is the most suitable (April-May).
