Countertop preparation:

From flour, yeast, water, salt, sugar and oil to prepare a dough, which is left to rise for 30 minutes.

Make the dough into a large loaf or four smaller ones. Make a cross-shaped cut on them and sprinkle with a little flour. Let it rise for another 20-30 minutes. (I left it in the closed oven protected from drafts).

Heat the oven. Knead well, then spread it in the pan on the stove, taking care to raise the edges a little up.

Grease with tomato juice or sweet ketchup.

Put the kaizer, sausages, mushrooms, olives, tomatoes, peppers and finally the grated cheese.

Bake for about 15-20 minutes, depending on how well the oven bakes.

Serve hot with various ketchups.

The first post after a beautiful holiday in Italy must be about traditional Italian pizza, which I haven't tasted in about 10 years, when I was last in the Peninsula. At the time, I was quite profane about pizza, so I treated it as such. This time we looked at Italian cuisine completely and completely differently at home, we practically enjoyed the culinary delicacies in the areas through which we took our steps: Venice, Bologna, Modena, Parma, Rome. I will return with the story of this journey through half of Italy, with details, stories and more.

Before talking about recipes, it must be said that traditional Italian pizza does not know fluffy countertops, ketch-up and many other ingredients added by various nations that have adopted pizza. In Italy there is no Mexican, Hawaiian or peasant pizza from Dâmbovița. It's just pizza with a very thin top, with heat-treated or raw ingredients, seasoned with chili flakes or chili-flavored oil.

leaf plays a key role in the success of a real pizza. The flour used is the one for bread, ie type 650. The dough is left to leaven in the cold for at least 48 hours, up to 5 days, so it will be very easy to spread and shape by hand. Baking temperature in restaurant ovens is higher than 350º, where pizza is baked in 3-4 minutes. In the domestic version it can be reached in the oven 240ºC, the baking time is 7-8 minutes.

Names and ingredients: beyond the hundreds of regional names for various types of pizza, many of them received Protected Designation of Origin & # 8211 D.O.P (Protected Designation of Origin), as in the case of Parmesan or Prosciutto. In the case of ingredients, the same rule applies for several types of pizza, in which ingredients are used D.O.P.

A short conclusion: pizza in Italy has nothing to do with that made in vain around the world. Which is why it will be a long time before we eat a pizza bought in Romania. After the short school I received in Italy, I hope that my homemade pizza will come out as close as possible to theirs, especially since I brought many of the traditional ingredients from Italy.

  • let's start with the base, ie the countertop, quantities for 4 countertops, according to the local recipe:
  • 500 g 000 or 650 flour
  • 1 teaspoon salt
  • 25 g (one cube) of fresh yeast
  • 325 ml of warm water

Dissolve the yeast in water with a little salt and flour, leave to ferment for 15-20 minutes, mix the rest of the salt with the flour. In a bowl, gradually mix the mayonnaise with the flour, pour the crust on the work surface sprinkled with flour. Knead for a few minutes, form a roll and cut into four equal parts, from which balls are formed. Knead each ball separately, about 2-3 minutes, by stretching with the bridge of the palm. Sprinkle a little breadcrumbs on a tray or plate, place the balls, cover with a clean napkin and let cool, as I said above, for at least 48 hours, up to 5 days. After fermentation, the crust is stretched by hand in the form of a countertop, as thin as possible, without twisting, at a diameter of about 30 cm. If there are tears in the countertop, fill it with pieces from the edge of the countertop.

We have the countertop ready, in the vast majority of cases it is smeared with tomato puree & # 8211 past & # 8211 mixed with a dry oregano powder and a pinch of salt, sprinkle on the counter pieces of fresh mozzarella sprinkled with a few drops of extra virgin olive oil, then the rest of the toppings. Pizza with tomatoes and ricotta

The fresh flavors make this pizza an excellent choice regardless of the time of day. Juicy tomatoes make a delicious contrast with pesto and br & acircnza. Also, if you use fresh tomatoes instead of tomato sauce you will cut off the amount of sodium in the dish.

Ingredient:

  • 250g cherry tomatoes cut & icircn in half
  • 1 tablespoon olive oil
  • 300g pizza dough
  • 100g of ricotta cheese
  • 2 tablespoons pesto
  • 2 tablespoons milk 1% fat
  • 1 clove of garlic, mashed
  • 50g br & acircnză feta, crushed
  • fresh basil leaves

Preheat the oven to 250 degrees with the pizza tray. Combine the tomatoes with the oil on an aluminum foil and put them in the oven for 7 minutes.

Spread the pizza dough on a baking sheet, place the dough with the baking sheet in the tray and cover it with a fork. Leave it in the oven for 4 minutes.

Mix ricotta, pesto, milk and garlic and spread the mixture over the dough, leaving the edges empty. Add the feta and bake the pizza for 10 minutes. Add the tomatoes and leave the pizza in the oven for another 4 minutes. At the end, add the basil leaves and cut the pizza into 8 slices.

1. Dough: For starters, I sifted the flour into a large bowl and mixed it with a teaspoon of salt. When you pour the yeast, it should not meet with the salt, because it will slow down its growth process. Therefore, mix the flour well with the salt. The water should be just lukewarm enough to dissolve the yeast. Put the mixture created over the flour and knead the dough for 10 minutes until it becomes fluffy. If it sticks too much, you can add a tablespoon of olive oil.

Divide the dough into 4 equal parts, using a kitchen scale, or by eye. Form a ball of each piece of dough and place them with space between them (they will grow) in a clean tray and lined with a little flour. Leave the dough balls to rise for 2 hours in a warm place, covered with a clean towel.

2. Sauce: As long as the dough grows, we can take care of the sauce. For the pizza sauce, we will put the tomato juice in a bowl over which we will add the finely chopped garlic (or put on a grater) the basil, oregano, chilli, salt and ground pepper. I usually press the basil and oregano with my fingers before putting them in the sauce, in order to better release the flavor.

3. After the 2 hours have elapsed, grease the tray lined with baking paper with a little olive oil. We spread the dough directly in the tray with our hands, pressing with the palm of our hand until we reach the desired size. Distribute a few tablespoons of sauce, put sliced ​​mozzarella, grate a little cheese (especially on the edges), and finally put diced tomatoes.

4. Bake for about 15-20 minutes at 180 degrees on the middle shelf, depending on how crispy you prefer it. Good appetite!
