Risotto with dried porcini mushrooms

Risotto with dried porcini mushrooms is a first course with an intense and full-bodied flavor and aroma, given precisely by dried porcini mushrooms. Although the risotto with fresh porcini is among the most popular, I personally believe that this version with dried mushrooms is even tastier and moreover it is a recipe that can be easily prepared all year round, as dried mushrooms are on sale in all seasons.

To prepare the Risotto with dried porcini mushrooms, start by rinsing 40 g of dried porcini mushrooms very well under cold water, eliminating any traces of soil and impurities that may have remained attached to the mushrooms. Once rinsed carefully, transfer them to a bowl and cover them with 200 ml of warm water, then let them soak for about 20 minutes, this way they will rehydrate.

When the mushrooms are completely rehydrated, drain them, squeeze them but do not throw away all the soaking water. Keep half of it, filter it with a very fine mesh strainer and keep it aside, because it will make your risotto even tastier!

In a saucepan or large pan placed over low heat, melt 50 g of butter and as soon as it starts bubbling, fry the chopped shallot and the soaked mushrooms, stirring often to avoid burning them.

When the rice is almost completely cooked, stir it with 50 g of grated Parmesan cheese, mix well, add salt if necessary and complete if you want by sprinkling your risotto with dried porcini mushrooms with 8 g of chopped fresh parsley.

Let the risotto rest for one or two minutes before serving it and enjoy your meal!


Raw porcini mushroom salad

Ingredients for 2 people: 200 g of small and firm porcini mushrooms, 1 clove of garlic, 30 g of flakes of Parmigiano Reggiano, salt, extra virgin olive oil, pepper.

Method: clean the mushrooms and cut them into thin slices. Rub the bottom of di and flat plates with garlic. Prepare the parmesan flakes with the help of a potato peeler. Arrange the porcini mushrooms on plates, add a little salt, cover with the flakes of Parmesan, season with oil and pepper. Serve immediately.

P.S. There are those who add a little lemon juice to the final dressing: we believe that there is a risk of excessively covering the flavor of the porcini mushrooms, but the combination is still allowed.

We do not dare to appropriate one of the traditional recipes of our boot, but on the one hand we allow ourselves to revisit it with quality products and on the other hand to be attentive to custom.

Let's see together the ingredients and the preparation of saffron risotto with dried porcini mushrooms.

Here are the ingredients to consider for a risotto for 4 people:

  • 200 gr of Carnaroli rice
  • 60 gr of dried porcini mushrooms
  • 8,0 dl of vegetable or meat broth
  • 1 white onion
  • 1 glass of white wine
  • 60 gr of aged Parmigiano Reggiano
  • 60 gr of Butter
  • 1 sachet of saffron powder
  • 1 tablespoon of Balsamic Vinegar
  • q.s. Extra virgin olive oil

Once all the ingredients are prepared, we take our dried porcini mushrooms and put them in soaking - in lukewarm water - for about 15 minutes to revive them. At the stroke of the timer you can squeeze them and get them sauté quickly with a drizzle of extra virgin olive oil, 1 tablespoon of balsamic vinegar and 2 tablespoons of wine.

Once this is done, filtered the water from the mushrooms and add it to the broth, which you will heat in a pot.

In a pan put a fry an onion with 15 grams of butter and a little oil, after a few minutes add the Carnaroli rice and leave it toast for a few minutes, then add the remaining wine and let it evaporate.

Once the wine has evaporated, just cover the rice with the broth and start cooking it, stirring occasionally.

Add the salt and, whenever the broth dries up, add more, taking care to always have some aside.

A few minutes before the end of cooking, add the saffron dissolved in the remaining broth. Mix everything and with the heat off, add the mushrooms, the remaining butter and the Parmesan cheese, leaving the risotto to stir for a couple of minutes. Et voila!


INGREDIENTS LASAGNE WITH PORCINI MUSHROOMS

WHICH LASAGNA TO BUY

Dry: there are those that go directly into the pan and those that need to be slightly blanched because they are a little more porous, the choice is yours, remember that for dry lasagna the bechamel must be more liquid.

Fresh: my favorites, if you take lasagna with a thin sheet, they go directly to the pan and are soft and will cook in a short time, if you take those with the most porous sheet, blanch them for 2/3 minutes.

LASAGNE WITH PORCINI: Prepare the béchamel (doses HERE)

Put the butter in a saucepan and let it melt then add the flour and mix quickly, add the milk a little at a time and continue stirring until it thickens.

PREPARE THE SEASONING

If you use fresh porcini mushrooms: Clean the mushrooms well without washing them, but only scratching off the earth with a small knife and then dab them with a slightly damp cloth.

Cut the mushrooms into slices or pieces, as you prefer.

In a pan, brown the garlic clove with the extra virgin olive oil, add the mushrooms, add salt and cook with a lid for 20 minutes so that the cream is formed.

When cooked, add a handful of chopped parsley.

If you use frozen porcini mushrooms

Let the mushrooms defrost at room temperature and then proceed in the same way as for fresh mushrooms for cooking.

PREPARE LASAGNE WITH PORCINI MUSHROOMS

Put the porcini mushrooms in the béchamel and stir.

Pour a ladle of béchamel on the bottom of the pan, put a layer of lasagna sheet and then again a layer of bechamel and mushrooms.

Put another layer of lasagna again and continue in this way until you run out of ingredients.

Finally on the surface of the lasagna with porcini mushrooms put the béchamel sauce with mushrooms, and a sprinkle of parmesan.

It is advisable not to add cream and / or butter in order not to alter the tasty flavor of the mushrooms.

Pasta with sautéed fresh porcini mushrooms and pumpkin

Pasta with sautéed fresh porcini mushrooms and pumpkin is the first dish par excellence of the autumn season.

The ingrediants for 4 people are:

  • & frac 12 kg of egg pasta (fettuccine, linguine, tagliatelle)
  • & frac 12 kg of peeled and washed Mantuan pumpkin
  • 400 gr of sautéed fresh porcini mushrooms
  • 50 gr of grated Parmesan cheese
  • 1 yellow onion
  • 2 cloves of garlic
  • 3 tablespoons of extra virgin olive oil
  • salt and pepper as required.

There Preparation:

  1. Clean and cut the pumpkin into cubes.
  2. Brown the pumpkin and onion in a non-stick pan.
  3. Add a little water, salt and pepper.
  4. Cook the pumpkin until the liquid is completely absorbed.
  5. Reduce the pumpkin cream with the mixer.
  6. Cook the pasta in salted water, keeping a ladle of water aside.
  7. Sauté the pasta in a pan with pumpkin cream and mushrooms, adding water if necessary.
  8. Mix the pasta with the Parmesan and serve.
