3 tablespoons sugar
150 ml liquid cream
1 sachet of gelatin

for jelly:
300g mure
250 ml blackberry compote
4 tablespoons sugar
1 sachet Red cake-jelly

for decoration:
200 ml liquid cream

Method of preparation
For the top, put the cocoa in a bowl and pour boiling water, stirring constantly, until smooth, then leave to cool. Strain the composition so as not to remain cocoa lumps.
Beat the egg whites hard with a pinch of salt. Add half the amount of sugar and mix until you get a glossy meringue, which makes spikes when you remove the blades from the mixer. Rub the yolks with the other half of the sugar until they become white and creamy. Gradually add the oil, rum essence, then the cooled cocoa composition. Incorporate the flour mixed with the baking powder and at the end, in 2-3 rounds, the meringue.
Pour the composition into a tray lined with baking paper. Put the tray in the oven over medium heat for about 40 minutes, until the top becomes firm to the touch. Take it out on a grill and leave it to cool.
In order to obtain the blackberry juice, I passed 500g of blackberries through the machine with separator (the one for tomato juice) and I removed the seeds.
Put on the fire, in a bowl, the milk with the pudding powder and in another, the blackberry juice with the pudding powder and the sugar, over low heat, chewing continuously until the composition starts to thicken. Then set aside, cover with cling film so that the pojghita does not catch and let it cool. After it has cooled a bit, mix the composition with whipped cream.
Prepare the gelatin according to the instructions on the package and incorporate it into the composition.
Cut the cocoa top into two equal parts and syrup it with blackberry compote. Put one of the tops on the plate, inside an adjustable cake ring and with a spoon you start to put over the cream top. Put a spoonful of vanilla cream in the center, then a tablespoon of blackberries on top, again vanilla, then blackberries, and so on, until the 2 creams are finished.
Place the second top on top and put the cake in the fridge.
Place 150g of blackberries on the counter and make compote from the rest. For the jelly, mix the blackberry compote according to the instructions on the packaging of the Dr. Oetker Jelly Cake envelope and then pour it over the blackberries.
Put the cake in the fridge for a few hours (even overnight).
