Rice and potatoes is a recipe of the poor Neapolitan tradition ... a very good soup that I often prepare during the winter. Since a cold wave will hit Italy in these days, I thought I'd post the recipe for this soup. Rice and potatoes can be prepared in white, as in this case, or by adding a few tablespoons of tomato puree, in both cases it is very good. Kisses to those who pass by and happy Wednesday.
How to make rice and potatoes
Prepare the vegetable broth
Peel the potatoes and cut them into small cubes.
Slice the onion into a veil and put it in a pan with the oil to dry. Add the potatoes and the chopped basil and cook in the sauce for a few minutes.
Cover with the boiling broth and bring to a boil.
Add the rice and cook it according to the expected cooking time.
Stir in rice and potatoes continuously, adding more broth where necessary and adding salt. When cooked, turn off the heat, add pepper and Parmesan cheese and mix everything.
Pour the rice and potatoes into the plates, sprinkle with grated Parmesan and serve!
