The recipe for this chocolate tart is signed by Ernst Knam, the king of chocolate, German by birth but Italian by adoption, well known for his particular pastry creations, made of unusual combinations. Its motto is: "If there is no chocolate in heaven, I don't want to go." Well, how to blame him;)
In this recipe, however, there is no strangeness, just a shell of shortcrust pastry with cocoa crumbly and a creamy filling made with a dark chocolate custard cream.
Therefore, postpone the good intentions on diet and healthy eating until tomorrow because this chocolate tart must absolutely be tasted, I found it really fantastic and I highly recommend it even just a little bit ino ino;)
How to make chocolate tart
Start preparing the shortcrust pastry by working the butter with the sugar.
Add the egg and vanilla and mix everything with the butter cream.
Now add the remaining sifted yeast, flour, cocoa and salt ingredients.
Knead quickly until you get a compact and homogeneous mixture.
Form a ball, cover it with cling film and let it rest in the refrigerator for at least 2 hours.
Meanwhile, prepare the custard by working the sugar with the egg yolks.
Then add the flour and the starch and mix thoroughly.
Put the hot milk in which you have simmered a vanilla pod, mix and cook until it thickens.
Stir from time to time. Once the cream is ready, cover with a contact film and let it cool.
Melt the chocolate in a saucepan with the cream, then let it cool.
Take back the pastry and roll it out on a floured pastry board with a thickness of about 4 mm
Then line a buttered mold with the pastry. Cut out the excess pastry along the edges. Then with the tines of a fork make small holes in the base.
Once the chocolate has cooled, add it to the custard and mix.
Transfer the cream obtained inside the mold.
With the leftover shortcrust pastry, form thick strips to cross over the tart.
Bake in a preheated oven at 180 ° C for 40 minutes.
Leave to cool, then your chocolate tart is ready to be brought to the table.
