The tacos recipe that I propose today is typical of Tex-Mex cuisine and includes a crunchy wafer that is fried and then folded in half. Obviously, to speed things up, you can opt to use ready-made tacos and maybe dedicate yourself to making accompanying sauces such as guacamole or a yogurt sauce with the addition of lime and paprika.

How to make tacos
Put the cornmeal in a bowl and mix it with the warm water and salt. Mix until you get a homogeneous dough, then put it in a bowl covered with plastic wrap and let it rest for half an hour.
Now divide the dough into 8 balls.
Place each ball between two sheets of parchment paper and, with the help of a rolling pin, create a round pastry with a diameter of about 15 cm.Fry each disc in a pan with oil, trying to fold it while cooking. Once the dough is golden, place it on a tube and give it the shape of a crescent.
Now prepare the filling of the tacos. Sauté a little thinly sliced leek in the pan with the oil. Then add the minced meat and brown then add salt and add the chopped tomatoes. Cut the mold into strips. Stuff the tacos with the meat filling.
Add the cheese and serve.
