The soda bread (unleavened bread) is an Irish bread that is prepared with baking soda instead of the classic brewer's yeast that reacts with buttermilk to become a leavening agent. Obviously you don't expect a classic bread (you certainly can't expect to get real bread in less than 1 hour!), But as a super fast bread recipe it satisfied me. I decided to decorate it by making a cross cut and adding Chia seeds, sesame, flax and poppy, but you can proceed as you prefer, even using the loaf pan for a loaf type bread. Today, for the celebrations related to St. Patrick and with the thought that not even this year I was able to go to Ireland for his celebrations, I honor this day with the recipe of soda Bread which will be followed by another recipe linked to the occasion, see you later :)
How to make soda bread
Combine the two flours in a bowl, then add salt, sugar and baking soda.
Mix buttermilk (in case you do not find it, prepare it by adding the juice of half a lemon to whole milk and leaving it at room temperature for a few hours), and oil and then add them to the flour.
Mix well: you will get a firm but soft and sticky mixture.
With well-floured hands, form a loaf and place it in a mold lined with parchment paper.
With a floured blade make a not too deep cross cut, brush with oil, then decorate each clove with seeds of your choice (I used linseed, sesame, poppy and chia seeds).
Cover the bread with aluminum foil, then bake in a preheated convection oven at 220 ° C, and bake for about 40 minutes. In the last 10 minutes of cooking, remove the aluminum foil.
At least let it cool before serving your soda bread.
