The term Amaretto refers to a type of pastry made with almond paste, made with sugar, egg white and almond flour.
A few months ago my boyfriend was in Saronno and he brought me the macaroons .... Today I decided to try to make them myself by inventing this recipe.


How to make Amaretti di Saronno ®

Beat the egg whites until stiff, add the sugar and a squeeze of lemon.

Add the chopped hazelnuts slowly so as not to disassemble the mixture and mix everything gently.

Arrange some cups on a baking sheet and fill them halfway with the mixture using a spoon.

Place in the oven and bake at 120 ° C for 40 minutes or until golden brown.

Take them out of the oven, let them cool and serve.

The macaroons they make in Saronno are not as hard as those found in our supermarkets, so don't expect hard cookies, but crunchy on the outside and crumbly on the inside.
Another thing .. I put the hazelnuts, but if you want you can also add the almonds.
