The bolo de maracuja it's a Brazilian recipe prepared with maracuja, which we commonly call passion fruit. It is a bolo, or a cake, usually in the shape of a donut, with the juice of the passion fruit in the mixture and then completed with a syrup always based on the same fruit. The result is a very simple yet refined dessert, a greedy way to bring an explosion of tropical taste to the table;)


How to do the bolo de maracuja

First of all, open the 4 maracuja in half, remove the pulp with a teaspoon and pass it in a colander to remove the seeds.

Whip the eggs with the sugar until they are light and fluffy, then add the oil first, then the maracuja juice obtained.

Stir in the sifted flour and yeast and knead until a homogeneous mixture is obtained.

Pour into the greased and floured mold and bake for about 40 minutes in a convection oven preheated to 180 ° C.
remove from the oven and let cool.

Now prepare the syrup: extract the pulp from the 2 maracuja, this time without passing it through the colander.
Pour it into a saucepan with butter and sugar and bring to the boil to obtain the syrup.
Then pour the sauce thus obtained on the now warm cake.

The bolo de maracuja is ready, you just have to serve it.
