The cake of the roses is a sweet of leavened dough like brioche dough that is stuffed with a cream of butter and sugar, the dough is rolled and then cut into pieces that take the shape of rosebuds, hence its name. The cake of roses is a typical dessert of the city of Mantua and its history seems to date back to 1400, it is said that it was made for the first time on the occasion of the wedding of Isabella d'Este with Francesco Gonzaga Duke of Mantua, the a Rosebuds given to the cake by the court confectioners represented the flowering of the beauty of Isabella, at the time just sixteen.The classic filling for the rose cake is butter cream, but you can also fill the cake with jam, Nutella or custard, given its scenic shape it is ideal to prepare both for a special breakfast or perhaps for Mother's Day.

How to make the rose cake
Prepare a leaven by mixing 3 tablespoons of water, yeast, a teaspoon of sugar and 50 g of flour in a bowl.
Mix and knead until you get a ball of dough, cover it with a cloth and let it rise for 40 minutes.
Now put the flour in a bowl, make a hole in the center and place the leavening, soft butter, egg, sugar and aromas.
Begin to knead adding the milk as you go.
Work by adding milk until you get a soft dough like brioche dough. Make a ball and let it rise for 1 hour.
Now prepare the buttercream by whipping the soft butter with the sugar.
Roll out the dough on a floured pastry board forming a rectangle.
Spread the butter cream over the entire surface.
Roll the dough into a sausage.
Cut the roll into thick slices.
Arrange the slices obtained in a buttered pan, leaving a few cm of space between them.
Cover the cake with a blanket and let it rise for about 2 hours.
After rising, each swirl of dough will swell close to the other, forming many rosebuds.
Brush the rose cake with a little milk and sugar grains and bake in a preheated oven at 180 ° C for 30-40 minutes.
Leave to cool and serve your rose cake.
