  • filling:
  • 500 gr Greek yogurt (at room temperature)
  • 200 ml liquid cream
  • 100 gr white chocolate Green Velvet
  • 2 lg Green Sugar Powder (if you like sweeter, supplement quantity)
  • 4 sheets of gelatin
  • 100 ml of cold water
  • 1 fir lemon grass
  • 200 gr strawberries
  • for glazing:
  • dark green Velvet chocolate
  • strawberries

How to prepare cake with yogurt, white chocolate and strawberries:

This cake with yogurt, white chocolate and strawberries is very easy to make.

First, prepare the countertop.

In a bowl, separate the egg whites from the yolks. Whisk the egg whites with a pinch of salt. When they become dense and gain consistency, add the sweetener, continuing to mix until you get a glossy meringue. Add the yolks, stirring constantly. At the end, add the sifted cocoa and mix with a spatula to keep the air from the egg whites.

Once the composition is homogenized, it is poured into a baking dish provided with baking paper. Bake in the preheated oven at 170 degrees C for 20 minutes.

After baking, remove from the oven, then leave to cool.

After tempering, the top is syruped with black coffee (or sweetened to taste).

The same form of baking is used to assemble the dessert.

Gelatin is hydrated in cold water.

In a bowl, on the fire, put the liquid cream. As it heats up, add the white chocolate, stirring constantly until it melts and homogenizes the composition. Add 2 lg sweetener and crushed lemon grass in a mortar. Mix, and at the end add hydrated and drained gelatin. Leave it on the fire for 1-2 minutes, stirring constantly to melt the gelatin, then remove the composition from the heat. Strain and add over the Greek yogurt, mixing.

Wash and cut a few strawberries, place them on top of the syrupy top. Pour the yogurt mixture over the strawberries. Place a few slices of strawberry on top, then let the dessert cool until the next day.

Glaze with dark green Velvet chocolate and strawberries or as desired.

It is a fine dessert, flavored with lemon grass and sweet with white chocolate.


Strawberry and yogurt cake

Ingredients

For the crispy countertop:

- 75 g of browned almonds, finely ground

- 162 g of wafers with chocolate cream

- 100 g of unsalted, melted butter.

For the yogurt cream:

- 454 g of creamy Greek yogurt, 9% fat (including whey)

- 1 teaspoon of vanilla essence

For the cake:

- whipped cream for decoration (optional)

- chocolate shapes for decoration (optional).

- silicone foil for baking

- 6 baking rings of 7.62 cm x 7.62.

Method of preparation

You will deal primarily with the crispy wafer top, similar to the one for cheesecake.

1. Put the silicone foil on a baking paper, then cut from another piece of paper some strips measuring 25.4 cm and 10 cm. Put the rings on the silicone foil and then line them with the strips cut earlier, securing them with adhesive tape.

2. In a food processor, grind the almonds until you get a fine powder, then put them in a small bowl.

3. Take the wafers and put them in the food processor, grinding them until you get a fine composition. Add the almonds and sugar over the wafers and process the composition until smooth.

4. Add the melted butter and mix everything until the dough softens.

5. Divide the countertop into equal portions at the base of the baking rings (approximately 2 tablespoons in each shape). Using the bottom of a glass, press and level the surface of the dough.

6. Refrigerate the countertop for one hour.

Then comes the yogurt cream:

1. Put the gelatin sheets in a bowl of cold water and let them soak for 10 minutes.

2. In a small frying pan, heat the milk until it is hot, but not enough to boil. Take it off the heat, then remove the gelatin sheets from the water, squeeze them and add it to the warm milk, stirring until it dissolves. Allow the mixture to cool.

3. Place the yogurt in a medium bowl, then, using a fine sieve, sprinkle the powdered sugar over it and mix well with a spoon until incorporated. Add the vanilla essence and mix again. Add the milk with gelatin to this composition, straining it through a piece of gauze and then mixing well.

4. Beat the liquid cream with a mixer, on medium speed, until it becomes hard, then add it to the yogurt cream in three series. After mixing well, put the cream aside.

In the end, all you have to do is assemble the delicious strawberry and yogurt cake:

1. Remove the countertop rings from the refrigerator.

2. Cut the strawberries in half, then stick them to the baking paper you lined the rings with. At this stage, you must have the patience to arrange the strawberries correctly, so that in the end they look exceptional.

3. Take the yogurt cream and add it over the counter and over the strawberries with a spoon, about halfway up the rings, fixed above the strawberries.

4. Add a layer of strawberries over the cream.

5. Continue to fill the forms with yogurt cream until you reach the edge of the baking paper with which you lined the rings. Cover the cakes with cling film and leave them to cool for 4 to 6 hours. It is important to cover them, because otherwise they will borrow various odors from the refrigerator, which is not exactly appetizing.

6. Remove the baking paper from the rings and unwrap the rings as well. Put the cakes on a plate, decorating them with whipped cream and chocolate shapes (find out HERE how to make them).

Even if it seems to you that there are quite a few steps to follow to do it strawberry and yogurt cake, you have to admit that the idea of ​​getting a dessert without baking is much more tempting now, when the heat has come!


Yogurt cake

Mix the egg yolks with the sugar and mix until it dissolves, add melted butter, lemon peel, vanilla sugar to the composition.

After mixing the mixture, gradually add the baking powder and flour. We need to get a fairly firm dough that we divide into two equal parts.

We wrap them in cling film and put them in the freezer for 30 minutes. Meanwhile, prepare the yogurt cream.

Beat the egg whites, add the sugar, yogurt and the 7 tablespoons of flour. Mix the mixture well.

Grease a pan with butter (35cm × 25cm) and line it with flour. Spread a ball of dough on the bottom of the tray, pour the yogurt cream, grate the other half of the dough. Put the tray in the oven over medium heat for 35-40 minutes.

Allow the composition to cool.

Preheat the breadcrumbs, melt the butter (or oil) in a large pan, add about 200 g of breadcrumbs and let it fry over a good heat until it starts to brown, be careful not to burn it, then turn off the heat and add the sugar. . For extra flavor, add a little cinnamon.

When the composition is almost cold, take the pieces from it with a spoon and shape papanas with wet hands and roll them in hot breadcrumbs. I let it cool just enough to shape the papanas.

Serve the papanas with sour cream or jam depending on how you like it.

ingredients

• 3 eggs
• 150 g of Greek yogurt
• 150 ml of coconut oil
• 175 g of flour
• 1 tablespoon butter
• 75 g of corn starch
• 170 g of Green sugar or other natural sweetener
• 1 teaspoon of vanilla essence
• 1 teaspoon of lemon essence

Separate the egg whites from the yolks, placing them in separate bowls. Beat the egg whites with a pinch of salt with the mixer until they foam hard.

Add the yogurt and sweetener over the yolks and mix until a creamy composition results. Then add the essences and coconut oil and mix.

Incorporate in this composition the flour previously mixed with the starch.

Add the egg white foam and mix until smooth, with gentle movements, so as not to damage the foam.

Easy delicacy - Yogurt cake and fig topping

Remember the taste of summer vacations and the sea sun and taste a fluffy cake from Corfu. You will feel in it all the Greek aromas from the sunny shores of the Mediterranean: figs and Ouzo. If you want, you can also use fresh figs instead of dried ones.

Preheat the oven to 170C / gas stage 3. Chop the toast and nuts with a food processor or chopper. Mix them with 2 tablespoons of olive oil and 2 tablespoons of sugar and knead lightly by hand until the bread is moist and the mixture becomes sticky. Spread it by hand in a round tray with removable walls (diameter 25 cm,) greased with oil.

Bake the countertop for 10 minutes until it turns brown. Remove from the oven and allow to cool to room temperature for 30 minutes.

Cream: In the meantime, you can start making yogurt cream. Mix the cream cheese and 200 grams of sugar with the mixer until it becomes a foam. Add the yogurt, egg whites and 1 teaspoon of cinnamon and mix again until incorporated and forming a fluffy mixture. Pour the cream into the cooled countertop.

What you are going to do will seem a little complicated, but you just have to make sure that you have a large and deep tray, which can hold the round tray, and follow the steps.

Put the round tray in the deep tray, then pour hot water so that it surrounds the cake tray 1 cm below its edge. Bake the stew for 45 minutes, until the cream hardens on the edges. Turn off the heat in the oven and leave the cake in the pan with water for an hour, with the oven door open. Remove the cake and let it cool for another hour at room temperature.

topping: In the meantime, prepare the topping with figs. Put the peeled figs in a bowl of warm water and let them soak for an hour. Add the cinnamon stick, orange peel and figs. Decrease the heat and boil all the ingredients together for 10-15 minutes, until the figs soften and the mixture of water and alcohol has the consistency of a syrup.

Remove the figs and add 100g of sugar to the syrup and simmer for 20 minutes until the syrup is reduced by half. Remove the cinnamon stick.

When the cake has cooled, peel off the removable walls of the tray and cut generous slices of the fluffy cake. Serve with topping figs.
